History

Gaugalin is the Provençal word for poppy. Gau means "rooster" and Galin "chicken."
In Provence, Gaugalin is also used to express the ambiguity of being both male and female (a chicken that has a cry similar to that of a rooster).
 

Gaugalin is a liqueur with an alcoholic strength of 25% alc/vol made from an infusion of poppy petals (papaver Rhoeas) and the seeds of the opium poppy (papaver somniferum), natural raspberry and lychee flavors, sugar, alcohol and red coloring.

Production method

Originally made from poppy petals gathered from the wheat fields around the Distillery, Gau Galin is now made from poppy petals imported from Iran. The flowering tops are harvested in the spring. Immediately after their harvest, the flowers are dried in a fresh, dry place until they are required. On their arrival at the distillery, the dried petals are left to macerate in a water/alcohol mix for about two weeks. Once the aromatic fraction has been fully extracted, the infusion (the aromatic heart of the extraction) is drawn off then reduced in strength with the addition of water purified by reverse osmosis to separate off the tannins and mucilage. The plants, still impregnated with alcohol and flavors, are distilled to recover all the flavors. This is how the poppy spirit is made.
When making Gau Galin, we add the raspberry and lychee flavors that give the liqueur its unique taste. And the coloring gives Gau Galin its beautiful red appearance.
Once the various components have been blended, the Gau Galin is checked, tasted, filtered and then bottled on the Estate.
 

How do you drink it?

Gaugalin is drunk over crushed ice, partnered with tequila or mixed in a cocktail with fruit juices such as orange, grapefruit, apricot, apple/blackcurrant (2 parts fruit juice to 1 part Gaugalin).

Organoleptic profile

Appearance: Gau Galin has a deep cherry red color.
Bouquet: Its fruity nose reveals red fruit aromas with the gentle addition of a floral note.
Palate: It is rich in the mouth, with a raspberry flavor moving smoothly to a note of lychee on the finish, with the added complexity of the spicy, plant notes from the poppy.
