Delicious sour par Elliot Ball, Bartender de The Cocktail Trading Co (Londres)

Ingredients:

• 25 ml Pere Magloire VS Calvados
• 25 ml RinQuinQuin
• 25 ml fresh lemon juice
• 20 ml sugar syrup
• 20 ml egg white
• 1 dash each of salt solution, Rabarbaro & Pino Mugo

Preparation:

Shake briefly without ice to emulsify the egg white, then shake again with ice and strain into a chilled coupette. Use Libbey Embassy 5.5oz coupes, as shown in the photo.
