Green Beast by Raphaël Leclercq, bartender at A Blend of Knowledge and barmanager at Frenchie Covent Garden (London)

Ingredients:

25 ml Henri Bardouin pastis
25 ml fresh lime juice
25 ml simple homemade syrup
50 ml still water

Preparation:

Shake briefly, double strain over ice in a rock glass.
Garnish :
Garnished with a nice long peel of cucumber. The ratio of water can be adjusted to taste. It is a great aperitif, definitely a pre meal drink.
