Lou Saussoun (the poor man)

Ingredients:

For 4 people

•    150 gof peeled almonds
•    100 gof anchovy filets in oil
•    1 fennel frond
•    2 fresh mint leaves
•    2 garlic cloves
•    20 cl of olive oil
•    1 shot of Henri Bardouin Pastis

 

Preparation:

Mince the fennel, cut the anchovies into pieces. Snip the mint. Grind the almonds. Add other agreements and crush well to obtain a butter. Incorporate the olive oil a little at a time.
To be eaten on grilled toast.
(The almonds may be replaced with nuts and pine nuts, etc.)
