Roast Pork with Oranges
For 4 people
• 1 roast pork in 1.2 kg fillet
• 4 oranges
• 2 onions
• 80 g of butter
• 2 cloves
• 40 g of powdered sugar
• 1 glass of ORANGE COLOMBO
• Salt, pepper
Preparation: 30 mins.
Cooking Time: 1 h 30 mins.
In a casserole with a thick bottom, melt 40 g of butter, without allowing it to darken.
Brown the roast pork in it on all sides.
As soon as it is browned, add peeled and minced onions, lower the heat and allow to cook on low heat for 1 hour 30 mins.
During this time, peel the oranges with a sharp knife, remove the skin from top to bottom and cut them into slices that are not too thin.
In a non-stick frying pan, met the rest of the butter on low heat and brown the oranges, add the crushed cloves, sugar and allow to cook on low heat for 20 mins., occasionally turning the oranges. Check that the juice does not caramelize too quickly.
Cut the roast into slices, place it in a dish and decorate with preserved oranges.
Deglaze the casserole with the orange juice and the glass of ORANGE COLOMBO.
Cover the roast with the juice, add salt and pepper as desired and serve immediately.
