Mandarin Orange Sabayon



For 4 people

•    8 egg yolks
•    10 tablespoons of fine sugar
•    8 tablespoons of BIGARADE



Beat egg yolks in a casserole with sugar and add BIGARADE.
Place the casserole in a larger oven-proof container. Fill container with hot water and set up a double-boiler, place on low heat.
The trick is to beat the mixture without stopping while it heats gradually.
Warning, this mixture must stay lukewarm, do it so that this mixture becomes a semi-liquid creamy delight.
