Pastis Henri Bardouin Sorbet


• 375 g of water
• 38 g of glucose
• 188 g of semolina sugar
• 8 g stabilizer (Stab 2000
• 1 l of lime juice
• 60 g yellow pastis (Henri Bardouin)


Make a syrup with water and glucose, add the sugar mixed with the stabilizer, carry the everything to boil. Off the heat, add the juice lime and yellow pastis. Pour into a bowl and block in the cold.
