RinQuinQuin chocolate mousse

For 4 people


Chocolate mousse with RinQuinQuin:

Ingredients for 4 persons

• 120 gr of semi-skimmed milk

• 2 egg yolks

• 20 gr of sugar

• 150 gr of dark chocolate Brazil Carioca 72% (Jean-Paul Hévin)

• 5 cl of RinQuinQuin

Light vanilla cream of Tahiti:


• 100 g of liquid cream 35% fat

• 1 egg yolk

• 20 g of sugar

• 1 vanilla pod of Tahiti


Chocolate mousse with RinQuinQuin:

• In a saucepan, mix the milk, the yolks and the sugar and heat like a custard.

• Add the chocolate

• Cool to 30 ° then pour the RinQuinQuin

• Let cool.

Light vanilla cream of Tahiti:

• In a saucepan, bring the liquid cream to the boil with the vanilla pod previously opened in half.

• Mix the sugar and the egg yolk and then add them gently with the infused cream.

• Cook everything just before boiling.

• Let the cream cool

In a cocktail glass, place the chocolate mousse in a cold place and let it refrigerate for 1 hour. When serving, decorate with Tahitian vanilla cream and thin chocolate chips.
