Cherry Tiramisu Gau Galin from the Bistrot de Pays in Limans

Serves 4

•    16 sponge cakes
•    25 cl of milk
•    40 cherries
•    20 cl of GAU GALIN
•    250 g of mascarpone
•    250 g of liquid crème fraîche
•    30 g of sugar glaze
•    Powdered sugar

Preparation:

Dessert in glasses

Mix the milk with 10 cl of Gau Galin. Add sugar to taste. Quickly soak the sponge cakes in the milk-Gau Galin mixture. Place the sponge cakes in the bottom of the glasses.
Rinse the cherries, remove the stones and place the cherries on the sponge cakes.
Whip 250 g of crème into whipped cream (250 g of crème fraîche whipped with the sugar glaze) the gently incorporate the mascarpone and 10 cl of Gau Galin.
Place this mixture on the cherries.
Place in the refrigerator overnight.
