Snails with garlic butter and HB Pastis

Ingredients:

Serves 4

•    24 snails
•    4 cloves of garlic
•    A small amount of butter
•    1 trickle of HB Pastis
•    1 cup of stock
•    200 ml of cream
•    salt, pepper

 

Preparation:

Peel and finely chop the garlic and sweat it in the butter. Cover with the stock and Pastis and boil until reduced. Add the cream and reduce again. Add the snails, season.
Serve with a little sauce.
