Supreme of Citrus Fruit with Bigarade from the Bistrot de Pays in Limans

With:

Ingredients:

Serves 6

•    3 oranges
•    3 blood oranges
•    2 grapefruits
•    2 tablespoons of BIGARADE
•    Powdered sugar
•    1 pinch of cinnamon
•    Mint leaves

 

Preparation:

Peel citrus fruit with a sharp knife (remove all of the white part and membrane). Cut fruit into slices and place them on a plate.
Collect the juice and mix it with the BIGARADE, add sugar to taste and a pinch of cinnamon.
Sprinkle citrus fruit with the juice and place 2-3 mint leaves on top. Allow to rest in a cool place.
Serve very cold with a scoop of ice cream or 1 cookie.
